Chocolate Mint Mousse


1 package Mori Nu Firm Silken Tofu
2 oz almond milk (or other alternative)
¼ teaspoon mint extract
12 oz. dairy free dark chocolate chips
3 oz. powdered sugar


Melt chocolate chips in a double boiler, or in the microwave, set aside. To a food processor add tofu and pulse until smooth. Add almond milk, powdered sugar and pulse again. Reserve half of this mixture in another bowl. To this add the mint extract and mix well. To the remaining tofu mixture add the melted chocolate and pulse in the food processor until well mixed. Layer into dessert glasses, chill for 3 hours or more. Garnish with mint sprig and mini dairy free chocolate chips or shaved chocolate.
